What's for lunch 4/10/13


TACOS!

Our district has contracted with a New York State farm to provide beef raised without antibiotics and hormones. It is more expensive and there is less beef on the menu as a result but it is a huge improvement in the quality of our lunches. We season and prepare this dish. 

The hard taco shells from Mission foodservice contain: whole grain corn, water, vegetable oil (one or more of the following: cottonseed oil, corn oil or palm oil), contains 2% or less of niacin, reduced iron, thiamine, mononitrate, riboflavin lime. No sodium - 6g of fat (2 of which are saturated)   


I like this lunch. You can also leave out the beef and it becomes a yummy vegetarian dish. 

Do you ever have a hard time interpreting labels in the supermarket ? I know I do. Take a look at this label. My feeling if it has too many ingredients and I don't know what they are I may not buy it.

GRILLED CHEESE 2 WAYS!
Whole Wheat Grilled Cheese With Ham or Plain
Romaine Salad w/ Chickpeas & Grape Tomatoes

The grilled cheese sandwich is made with Cabot cheddar on whole wheat bread.  We use Nature's Own Whole Wheat Bread for these. The ingredients are: STONE GROUND WHOLE WHEAT FLOUR, WATER, BROWN SUGAR, YEAST, WHEAT GLUTEN, CONTAINS 2% OR LESS OF EACH OF THE FOLLOWING: SALT, VEGETABLE OIL (SOYBEAN OIL OR CANOLA OIL), DOUGH, CONDITIONERS (SODIUM STEAROYL LACTYLATE, CALCIUM, STEAROYL-2-LACTYLATE, MONOGLYCERIDES, CALCIUM IODATE, ETHOXYLATED MONO AND DIGLYCERIDES, CALCIUM PEROXIDE, DATEM), CULTURED WHEAT FLOUR, VINEGAR, CALCIUM SULFATE, MONOCALCIUM, PHOSPHATE, YEAST FOOD (AMMONIUM SULFATE), SOY LECITHIN.  The ham is Boar's head.

The salad is made with canned chickpeas, fresh tomatoes and lettuce.  The fruit is fresh. Salad bar available. 

I happen to have a sweet tooth which can get me in trouble sometimes !!  I do love giving my kids a treat from time to time and they love this recipe for Carrot Cake Cupcakes with Orange Coconut Cream Frosting. They are gluten free. 

Carrot Cake Cupcakes with Orange Coconut Cream Frosting

Gluten-Free, Yeast-Free and Dairy-Free Baking tips: It’s very important to keep the wet and dry ingredients separate until you are ready to bake. Once mixed, a chemical reaction begins between leavening ingredients and acids to “fluff” the batter. Which, if you are familiar with gluten-free and dairy-free baking recipes, you know is paramount in importance. No gluten, no eggs, no yeast to fluff, so, keep the dry stuff and the liquid stuff separate. When your muffin tins are lined, the oven is preheated, you have a spoon ready and a silicone spatula on-hand for folding, then you are ready to mix up wet and dry. “Fold” the batter—don’t beat it up—until mixed. Then carefully, and swiftly, spoon batter into liners and get the tin(s) into the oven (at the same time if you are using two tins). No peeking until the timer goes off. Again, this kind of baking is sensitive so it’s important to keep the temp consistent. It’s worth it!

2 cupcake tins**
Large cereal spoon

**If you don’t have 2 cupcake tins, cut the recipe in half. It won’t work to make the batter, bake half and then bake the others later. Your second batch will be flat cupcakes (see baking tips above). You can also use mini cupcake tins for bite-sized treats.
Ingredients:
Try to buy everything organic. Here’s why.
Frosting:
1 cup coconut fat from 1-2 cans of coconut milk (not reduced fat)*
1 tsp vanilla
Zest from 1 navel orange
2 tsp light agave nectar
Cake:
Fold-ins
1 cup shredded carrot
1/4 cup chopped pecans, toasted
1/4 cup chopped walnuts, toasted
1/2 cup shredded coconut, toasted
1/2 cup raisins
Dry Ingredients
3/4 cup almond flour/meal (for fluffier cupcakes, order organic blanched almond flour online from Benefit Your Life it’s the best)
1 cup sweet sorghum flour
1 tsp baking soda
1 tsp aluminum-free baking powder
1/4 tsp fine ground sea salt
1 cup sucanat
1/4 tsp ground nutmeg
1 tsp ground cinnamon
Blend/Wet Ingredients
1 tbsp chia
3/4 cup warm water
2 tsp apple cider vinegar
2 tbsp cold-pressed virgin coconut oil
1 tsp vanilla extract (be sure to use gluten- or alcohol-free if you have a sensitivity)
1/2 tsp fresh ground ginger
1 tbsp fresh orange juice
*Use the remaining liquid coconut milk for a smaller batch of Thai Coconut Curry Soup with Sweet Potato Dumplings, for Easy Chocolate Ice Cream or in the Banana Spinach “Training Wheels” Smoothie. Use the extra orange for Toasted Sesame and Orange Pancake Snackers.
Let’s get started.
Preheat oven to 350°F. Line cupcake tins with unbleached parchment paper liners. No liners? You can cut unbleached parchment into squares and press them into the tins for DIY tulip liners. They will pop out until they have batter in them to hold them in place, so set them aside if you go this route. Check out this how-to.
Prepare zest and shred carrots. Set aside.
Toast nuts in a small pan over medium for 5 minutes and set aside. Toast coconut separately in a small pan over medium heat for 1-2 minutes and set aside. Coconut browns quickly.
Place chia, water, vinegar, coconut oil, extracts and lemon juice in the blender and let sit for 5 minutes. You want the chia to sit in the liquid to “plumpen,” and you might as well toss all the other goodies in there. After 5 minutes, blend thoroughly.
While blending, in a large bowl, sift together almond flour, sorghum flour, sucanat, baking soda, baking powder, nutmeg, cinnamon and salt. Work your fingers in a circular motion to press/grind dry ingredients through strainer/sifter. Anything too big to make it through? Just dump it in the mix.
Now, fold together the dry ingredients and the “fold-ins”—carrots, pecans, walnuts, coconut and raisins.
Add the wet ingredients to the dry and fold until well mixed.
Spoon batter into cupcake liners so they are 85% full. Now place them in the oven and bake for 20 minutes (15 minutes for minis).
While they bake, open up your cans of coconut milk. Scrape out the fat on the top of the can and place in the medium glass bowl.
Add vanilla extract, agave and zest…
… and whisk together with a few strokes. Place in the fridge to solidify.
Remove cupcakes and allow to cool completely.
Using a pastry bag, a plastic baggie with a small whole in the corner, or with a trusty spoon or knife, top your cupcakes.
A little goes a long way with the frosting and the cupcakes are plenty amazing without frosting if you want to try them that way. You can also top with chopped and toasted pecans, coconut and/or walnuts.

Store your cupcakes in the fridge and remove about 5 minutes before serving.

The sauce is a Red Pack vitamin enhanced tomato sauce.  Here are the ingredients: Tomato Concentrate (Water, Tomato Paste), Sugar, Soybean Oil, Potassium Chloride, Onion Powder, Salt, Citric Acid, Spice, Garlic Powder, Vitamin C (Ascorbic Acid), Black Pepper, Vitamin E (DL-Alpha Tocopheryl Acetate), Natural Flavor, Vitamin A (Retinol Palmitate).  The cheese is a USDA commodity part skim mozzarella.  Ingredients are cultured pasteurized milk, salt, enzymes. The sodium is 240mg/oz.  I don't think the pizza is whole grain.

As always the salad bar is available and the Boar's head sandwich bar.

The ziti is a white flour pasta with some protein by Barilla Plus. The ingredients are:  Semolina, Grain and Legume Flour, Blend (Lentils, Chickpeas, Egg Whites, Spelt, Barley, Flaxseed, Oat Fiber, Oats), Durum Flour, Niacin, Iron (Ferrous Sulfate), Thiamine Mononitrate, Riboflavin, Folic Acid.

The sauce is a Red Pack vitamin enhanced tomato sauce. The sodium at 140mg is much lower than we previously used.  Here are the ingredients: Tomato Concentrate (Water, Tomato Paste), Sugar, Soybean Oil, Potassium Chloride, Onion Powder, Salt, Citric Acid, Spice, Garlic Powder, Vitamin C (Ascorbic Acid), Black Pepper, Vitamin E (DL-Alpha Tocopheryl Acetate), Natural Flavor, Vitamin A (Retinol Palmitate).  The spinach is fresh and make with garlic and oil. 


The chicken is from Tyson. They are flash-fried by the vendor and frozen and then we heat them in the overn. The serving size of two pieces - which is what elementary students get - has 14g of fat and 580mg of sodium.

The ingredients are: Chicken breast tenderloins, water, modified food starch, sodium phosphates, salt. PREDUSTED WITH: Enriched wheat flour (enriched with niacin, reduced iron, thiamine mononitrate, riboflavin, folic acid), wheat gluten, salt. BATTERED WITH: Water, enriched bleached wheat flour (enriched with niacin, reduced iron, thiamine mononitrate, riboflavin, folic acid), modified corn starch, salt, dextrose, spices, garlic powder, xanthan gum, oleoresin paprika and annatto. BREADED WITH: Enriched wheat flour (enriched with niacin, reduced iron, thiamine mononitrate, riboflavin, folic acid), salt, spices, garlic powder, extractives of paprika, natural flavors (spice extractives). Breading set in vegetable oil.  You all know how I feel about Tyson products. And I do suggest again, watching the movie Food Inc. and you will understand.

What's for lunch 4/4/13

Unlike many schools, we do make these pizzas. This is a white-flour pizza (not whole grain). The sauce is a Red Pack vitamin enhanced tomato sauce. The sodium at 140mg is much lower than we previously used.  Here are the ingredients: Tomato Concentrate (Water, Tomato Paste), Sugar, Soybean Oil, Potassium Chloride, Onion Powder, Salt, Citric Acid, Spice, Garlic Powder, Vitamin C (Ascorbic Acid), Black Pepper, Vitamin E (DL-Alpha Tocopheryl Acetate), Natural Flavor, Vitamin A (Retinol Palmitate).  The cheese is fresh. The chickpeas are canned but made into a lovely salad. The fruit is fresh. 



The food served in the cafeterias of the North Shore School District has made a complete turn around in the past three years.  Many of us on the District Wide Nutrition Committee along with Julia Van Loon ( School Food Reform Consultant) and the administration worked hard and long to provide our children with healthier food options.  This includes the vending machines in the MS and HS.  We got rid of the Gatorade, chips and other unhealthy options.  We all want our children to be healthy and make educated choices regarding food.  Sharing the ingredients with your children so they realize what is in something they are eating is so valuable. For example drinking a Gatorade with a bag of Doritos.

Have your kids google the ingredients. You can see there is quite a bit of salt and sugar. Nothing good here. Now Cool Ranch Doritos :
I don't see a lot of ingredients I recognize. Do you ?? Based on the ingredients you can see these two items do not provide the vitamins and nutrients that a children needs to play after school sports or even after a long day at school.  A water with a banana and a healthy granola bar is a better option.  Much better.

What's for lunch 4/3/13

The hot dogs are from Applegate Farms - so they are far better than many hot dogs but are hot dogs nonetheless. The ingredients are just: beef, water, sea salt, less than 2% of the following: celery juice, sodium lactate (from beets), lactic acid starter culture (not from milk), onion powder, spices, garlic powder, paprika. They have 6g of fat(2.5g saturated) and 380 mg of sodium. They are dairy-, casein- and gluten-free. They promote it as nitrate-free but this NYT article indicates the nitrate issue is tricky - and cites the company saying their bacon has the same level (naturally) of cancer-causing nitrates as conventional brands.  You may also not want your kids growing up thinking hot dogs are a good lunch given the potential link between processed meats and cancer. The bun is whole wheat.


The pasta is Barilla. The ingredients are: Semolina, Grain and Legume Flour, Blend (Lentils, Chickpeas, Egg Whites, Spelt, Barley, Flaxseed, Oat Fiber, Oats), Durum Flour, Niacin, Iron (Ferrous Sulfate), Thiamine Mononitrate, Riboflavin, Folic Acid. I am not sure what veggies they are serving. The corn is frozen and the fruit is fresh.

What's for lunch 4/2/13

I'm really curious as to why we stopped serving whole wheat french toast to go back to the meal declared to be "cake" for lunch by our committee's nutritionist - basically white flour bread.  The syrup is basically HFCS.  They are looking for an affordable maple syrup but do not have one yet - but they will be limiting the serving size this year in the meantime.  Actual lunch from our schools above. This meal has a lot of sugar, simple carbohydrates -- no whole grains.

The turkey bacon is by Applegate.  Here are the ingredients: Turkey (Turkey Used Never Administered Antibiotics, Growth Promotants or Animal By-products), Water, Sea Salt, Maple Sugar, Celery Juice, Onion Powder, Spices, Lactic Acid Starter Culture (not From Milk.)  They promote it as nitrate-free but this NYT article indicates otherwise - and cites the company saying their products have the same level (naturally) of cancer-causing nitrates as conventional brands. The potatoes are fresh and the apple crisp is homemade. I am not a fan of this lunch at all. Head for the salad bar. Load up on fruit and veggies.
